This recipe is awesome to serve with the main course. Whether it is fish, chicken or beef which you are serving to your guests, Mediterranean bean salad makes a delicious combination with all of them.
Ingredients:
A 15 oz can of kidney beans, drained
A 15 oz can of garbanzo beans, drained
A medium sized tomato, chopped
Sweet Corn(optional)
Zest of 1 lemon
Juice of 1 lemon
¼ cup red onion, chopped
1 tsp capers, rinsed and drained
½ cup fresh parsley, chopped
3 tbsp extra virgin olive oil
Salt, to taste
Method of Preparation:
Take a large bowl and toss all the ingredients into it. Mix them well so that everything gets combined properly.
Cover the bowl with a cling wrap and refrigerate for a few hours before serving.
