Mulligan Stew is a favorite dish during the winters. It is served hot, and it is a filling meal which costs less. It requires any and every vegetable available in the house and meat, and cooked in a pot over a fire.
Every culture has its own version of the Mulligan Stew, and it is also referred to as Hobo Stew, Irish Stew, and hotch potch. Here is a simple and basic version of the recipe of Mulligan Stew, which serves 6:
Ingredients
- 1 pound beef stew, cut in cubes
- 1 tablespoon oil
- 1 teaspoon salt
- 10 ounces tomato soup
- ½ teaspoon pepper
- 2 cups water
- 3 potatoes, cut in cubes
- 3 carrots, cubed
- 3 onions, halved
- ½ teaspoon dill
- ½ teaspoon oregano
- 1 tablespoon cornstarch
- 1 cup corn, green beans, or peas (optional)
Method
- Add the oil to a pot and set to a medium heat.
- Add the beef and cook it till it is brown.
- Add the salt, and pour in the tomato soup along with the water.
- Cover the pot with a lid till the meat tenderizes.
- Add the vegetables then and let it all cook for 30 minutes. If the water has dried, add some more.
- Add the cornstarch to make the water smoother and thicker. Sprinkle with parsley and basil, and serve hot.
