Mulligan Stew is a favorite dish during the winters. It is served hot, and it is a filling meal which costs less. It requires any and every vegetable available in the house and meat, and cooked in a pot over a fire.

 

Every culture has its own version of the Mulligan Stew, and it is also referred to as Hobo Stew, Irish Stew, and hotch potch. Here is a simple and basic version of the recipe of Mulligan Stew, which serves 6:

 

Ingredients

 

  • 1 pound beef stew, cut in cubes
  • 1 tablespoon oil
  • 1 teaspoon salt
  • 10 ounces tomato soup
  • ½ teaspoon pepper
  • 2 cups water
  • 3 potatoes, cut in cubes
  • 3 carrots, cubed
  • 3 onions, halved
  • ½ teaspoon dill
  • ½ teaspoon oregano
  • 1 tablespoon cornstarch
  • 1 cup corn, green beans, or peas (optional)

 

Method

 

  1. Add the oil to a pot and set to a medium heat.

 

  1. Add the beef and cook it till it is brown.

 

  1. Add the salt, and pour in the tomato soup along with the water.

 

  1. Cover the pot with a lid till the meat tenderizes.

 

  1. Add the vegetables then and let it all cook for 30 minutes. If the water has dried, add some more.

 

  1. Add the cornstarch to make the water smoother and thicker. Sprinkle with parsley and basil, and serve hot.
